Kick this soup up a notch by using a can of diced tomatoes. I usually throw in some spanish rice and serve with warm tortillas to dip in. Cook until mixture changes color, about 5 minutes.
Add the blended tomato mixture; Add the meatballs and zucchini and simmer on low heat until the meatballs are cooked through, about 20 minutes. Dissolve the bullion in the 4 cups hot water. Add meatballs a few at a time.
