I also used stone ground mustard since i didn't have the dijon. Goat's cheese & caramelised onion frittata with a lemony green salad. We love arugula for its peppery bite, but feel free to swap in whatever salad green you like.
I also used shaved parmesan rather than goat cheese, but i think most white cheeses would be delightful with this salad.
The goat cheese and oranges are perfect partners and the greens can be adjusted to your taste. What would be a good substitution for feta cheese? 8 cups baby spinach leaves, stems trimmed, washed, and dried. Totally agree… all of the candy and sweets coming up has me craving meals.
